With my whole foods, plant focused diet I feel fulfilled. I do not often crave sweets. But I do love baking!

We all love a good cookie. But what I love more is a healthy recipe! Being gluten-free and mostly dairy-free — I do consume kefir, quark and sometimes yoghurt since those are (partly) fermented — leaves me with to my own. I do not want to consume processed gluten-free or dairy-free products.

This leads me to start cooking and baking at home. I love experimenting with food and use nutrition as a healing source.

ADJUST & ENHANCE

By adding ground cinnamon and/or cardamon you bring these date cookies to another level. You can totally omit the lemon if you don’t like a little zesty flavour. Or if you do, swap the lemon for lime. To make it spicier you can even add ground ginger.

HOW TO MAKE DATE FILLED COOKIES

We start by making a chia seed pudding. Combine your chia seeds and water, stir good. Then we add the lemon juice. Add as much as you like. This is also the place to swap the lemon for lime or even to add a small amount of graded ginger. Put this mixture in your fridge and wait at least 10-15 minutes.

In the meanwhile you’re going to prepare the other ingredients. Cut the pitted organic Medjool dates in little pieces. You can totally use whole ones, but I like to pre-cut them to make sure the cookies will be smooth. Put into a food processor. If you don’t have access to a food processor you can also use an immersion blender. If using an immersion blender then you definitely need to pre-cut the dates!

Also add in the raw unsweetened cacao powder.

CHIA PUDDING

Depending on how your chia seed pudding is we are going to take action. If it is a thick pudding then it is the right texture and consistency. If it it is still a bit runny then put it it in your fridge for a little longer, until it becomes a thick pudding.

When the consistency is right add the chia pudding to the rest of the ingredients.

Add the dried coconut flour. Now mix! Scrap down the sides if needed. It will take a couple of minutes before it gets the desired consistency. It should come out as a sticky dough

Make little balls with a little scoop, or spoon. Press them a bit down.

Put them into the oven on 180 fan forced, for 18 minutes. The cookies will still be soft and a big sticky.

Ingredients

  • Medjool dates organic, unpitted
  • Cacao powder raw, unsweetened
  • Chia seeds
  • Lemon
  • Water
  • Dried coconut flour

Instructions

  • Add chia seeds, water and lemon to a small bowl and combine. Place in the fridge for 10-15 minutes. See notes.
  • Put the pitted Medjool dates, raw cacao powder, chia pudding and dried coconut flour in a food processor. Scrap down the sides if needed. This can take a couple of minutes. It should come out as a sticky dough.

Notes

  • Use an immersion blender as alternative. Cut the dates in little pieces before you blend them. This makes it easier to become a sticky dough without big chunks.
 
  • Chia seed pudding is ready to use when it’s a thick pudding. If it it is still a bit runny then put it it in your fridge for a little longer, until it becomes a thick pudding.
