I love eating and making soups. They give you a warm feeling. This Healing Chicken Soup has amazing healing properties. It is perfect when you want to give yourself a boost or whenever you’re under the weather.

I started my soup journey with roasted butternut squash soup. In the begin of last autumn I started making my own bone broth. Read about the benefits of chicken bone broth. Since then I made a lot of soups. Including this soup recipe.

What I like the most about this recipe is how versatile is is. Add whatever vegetables, spices and herbs you have on hand and you also create a healing soup!

This delicious Healing Chicken Soup can easily be adjusted to fit your dietary needs. Everyone has a different eating pattern but the beautiful thing is that this good base to build from!

To make this vegetarian or vegan omit the chicken. This will still make a Healing Soup. Because all the spices and herbs make this a curing soup.

I used Cajun spice mix to season the chicken but you can definitely substitute this for another spice mix. Chinese 5 spices will give it a sweet Asian-flavoured taste.

You can also substitute the dried rosemary and thyme for fresh herbs. Use fresh sage, marjoram, basil or just fresh thyme and rosemary.

If you like your soup extra spicy don’t hesitate to add a sliced hot pepper. We love a good hot lemony kick to our soup.

If you want extra healing properties then add turmeric. Make sure to add black pepper! The black pepper allows our bodies to absorb the turmeric better.

How to make Healing Chicken Soup

Choose your herbs and spices.

Start by dicing the carrots and onion. You want to cut the carrot into sizeable bites. Feel free to cut however you like. I cut them in thickish slices and then halved those.

Put cold pressed extra virgin coconut oil into a big pot, then sauté the carrots. Add after a couple of minutes the red onions to the big pot. Keep on sautéing the vegetables.

Whilst you sauté the vegetables you will want to brown your chicken. In a pan brown the chicken. Season with your herbs and spices of choice. I went with dried thyme, dried rosemary, black pepper and Cajun spice mix.

The next step is totally optional but I find that it is easier when serving the chicken soup. Put the chicken thighs on a plate and cut them into biteable pieces. This makes the soup ready to go when you are serving.

Now put everything (chicken, herbs and spices) to the big pot with vegetables. Add some extra coconut oil if needed. Let it cook for several minutes, I would say about 3-8 minutes.

Then slowly add water to the big pot. How much will depend on the size of your pot. But I always add quite a lot because you never can have enough soup, do you?

Let the soup simmer for a minimum of 2 hours. If 2 hours is all you have that is fine, but I prefer to keep it on the stove for 2.5-3 hours.

What to serve with

This recipe will taste delicious when you serve it along with a green salad and Buckwheat Crackers.

You can also pour this soup over glass noodles, quinoa or add wild rice.

For some more spiciness add chili-flakes on top

Ingredients

  • 5 carrots
  • 1 red onion
  • 1 garlic clove minced

  • 2 chicken thighs
  • dried thyme
  • dried rosemary
  • black pepper to taste
  • 1 full tsp cajun spices optional
  • 1 slice lemon
  • fresh parsley
  • 1 bay leaf
  • 1 cube ginger peeled
  • coconut oil cold pressed extra virgin
  • 1 staranise
  • 2 cloves
  • 1 cinnamon stick small
  • water

Instructions

  • Dice all the vegetables.
  • Put coconut oil in a big pot and sauté the carrots. Add after a couple of minutes the onions. Add after 1-2 min the garlic.
  • Brown and season the chicken thighs with cajun spices (optional), dried rosemary, dried thyme and black pepper for more flavour.
  • Put the chicken thighs on a plate and cut them into biteable pieces. (OPTIONAL)
  • Add everything (chicken, herbs, spices) to the big pot with veggies. Let it cook together for about 3-8 min. (add extra coconut oil if needed)
  • Then slowly add the water (how much depends on the pan you're using).
  • Let it simmer for min 2 hours. Enjoy!!

Notes

 
  • This can be made vegetarian and vegan by omitting the chicken. In creates a healing vegetable soup!
 
  • Soup will keep 4 days in fridge, or freeze.
