Buckwheat Crackers – gluten-free
These Buckwheat Crackers are gluten-free, dairy-free and vegan. This recipe is very easy to make at home and is adjustable. Nutty, rich in flavour and crispy. Pair it with parsley pesto or serve with a vegetable filled salad.
This heaven send cracker quickly became a stable in our household. I make sure to bake a new batch before I run out of my dairy-free buckwheat crackers.
I have been eating gluten-free for about 1 year now and never did I try making crackers myself. But I did learn how to bake breads, with ONLY whole foods and good ingredients. I just bought gluten-free crackers, until I tried to make them myself.
Cooking at home has allowed me to really tap into healthy eating and feeling my best. My number 1 tip for everyone that want to feel good is to start cooking and baking everything yourself. It is fun and you know EXACTLY what goes into your food, thus what goes into your body.
Ingredients in Buckwheat Crackers:
- Buckwheat flour
- Flaxseeds
- Vinegar
- Coconut oil
- Baking soda
- Salt
- Dried thyme
- Dried rosemary
- Water
Ways to adjust and enhance
This Buckwheat crackers recipe is super easy to adjust. You can use both ground and whole flaxseeds. Use whatever seeds and herbs you have on hand. However it is important to note to not swap all the flaxseeds. The flaxseeds are the binding factor of this gluten-free cracker recipe so use at least 2 tbsp, you can substitute the rest.
You can substitute the flaxseeds for chia seeds, pumpkin seeds, sunflower seeds or sesame seeds. You could also add in coconut flakes if you’re feeling a tropical vibe or shredded seaweed for a more Asian-flavoured buckwheat cracker. If oat flakes are your thing then you can sure add then. Chop up a couple of raisins and you have a sweetly but nutty tasting cracker.
Dried thyme and rosemary make a delicious pair in combination with the buckwheat flour. You could also swap these herbs for dried sage, chives, turmeric powder or oregano.
Step-by-step Buckwheat Crackers recipe:
Heat up your oven (fan-forced) on 170℃ / 325℉.
Firstly combine the buckwheat flour, ground flaxseeds, vinegar, coconut oil, baking soda, salt, dried thyme and rosemary in a mixing bowl.
Do not add the water yet.
Use a (wooden) spoon or just your hands.
It does not become a sticky mixture right away.

Then slowly add the water. Do this bit by bit. You may want to use a wooden spoon or just use your hand, whatever you prefer.
Now line a baking tray with parchment paper.

Put the dough in the middle of the baking tray. Flour your rolling pin lightly. Start rolling out the dough.
Roll until the dough is about 3-4 mm (this is my preferred thickness).
Here is where your creativity comes into play!
- Cut the dough into little pieces and spread them on your baking sheet.
- Don’t cut the dough, bake it and break afterwards into pieces for a more rustic look.
- Cut into big pieces, like triangles and rectangles.
Put the baking tray in the oven for 45 minutes on 170℃ / 325℉. They should look brown and have a rich nutty smell.
Wait to cool before using them. To store use an airtight container. These keep good for 2 weeks.
What to pair with Buckwheat Crackers:
- Parsley pesto
- Fresh garlic Skyr dip
- Pâté
- Loaded veggie Salad
- Tomato Carrot Eggs
It is also lovely to serve with Healing Chicken Soup and pair it with a dip or salad!

Buckwheat Crackers
Ingredients
- 85 gram buckwheat flour
- 6 tbsp ground flaxseed see notes
- 1/2 tsp vinegar
- 1 tsp coconut oil cold pressed & extra virgin
- 1/2 tsp baking soda
- 3/4 tsp salt
- 3/4 tsp dried thyme
- 1/2 tsp dried rosemary
- 120 ml water
Instructions
- Put all ingredients in a mixing bowl, except the water, and combine.
- Preheat oven (fan forced) to 170℃ / 325℉
- Slowly add the water, bit by bit, until it becomes a sticky dough.
- Put parchment paper on baking tray. Flour your rolling pin. Roll out the dough using the rolling pin.
- Cut dough into littles pieces, or how big ones if you like.
- Bake for 45 minutes. Remove from oven. Let the crackers cool down before using.
